Children love this dessert, but it contains raw egg whites. To be safe, don't serve to the very young or very old. I used Gala apples. In Home Made, Tana Ramsay strains the apples after cooking, but I threw them right into the food processor.
Apple Snow
6 eating apples, peeled, cored and cut into slices
4 tbsp water
2 large egg whites
4 tbsp granulated sugar
4 sprigs of mint
Put apples and water in medium pot with tight-fitting lid; bring to boil. Reduce heat to medium low and cook until apples are very soft, about 20 minutes.
Drain apples; purée in food processor. Cool completely.
Whisk egg whites in large bowl until peaks hold shape but tops flop over. Whisk in sugar one tablespoon at a time. Fold purée into egg white a tablespoon at a time.
Divide between tumblers or small desserts bowl; chill until cool. Garnish with mint.
Makes 4 servings.
